The dark chocolate adds a rich, full-bodied flavour, while the lemon caviar adds a tangy, crunchy note. This unexpected combination of flavours creates a perfect balance of sweetness and tartness.

The recipe is simple and easy to make.

Ingredients for this chocolate sorbet with lemon caviar for 2 gourmands:

- 100 g premium dark chocolate
- 2 cups of whole milk
- 1 cup full cream
- 1 cup of sugar
- 1 pinch of salt
- 2 tbsp. roasted caviar lemon powder
- 1 tbsp. fresh lemon juice
- 2 tsp lemon caviar pearls

Preparation of the sorbet:

Melt the dark chocolate in a double boiler or microwave, taking care not to burn it.

In a saucepan, combine the milk, cream, sugar and pinch of salt and bring to the boil.

Remove the saucepan from the heat and add the melted chocolate to the milk and cream mixture, stirring until completely dissolved.

Add the roasted lemon caviar powder and fresh lemon juice to the chocolate mixture and stir until well combined.

Allow the mixture to cool at room temperature for about 30 minutes, then transfer to a container and place in the refrigerator for about 2 hours or until completely chilled.

Once the mixture has cooled, transfer it to your ice cream maker and follow the manufacturer's instructions for making the sorbet.

Once the sorbet is ready, transfer it to an airtight container and place it in the freezer for about 2 hours or until it is fully set.

Before serving, remove the sorbet from the freezer and let it stand at room temperature for about 10 minutes to make it easier to serve.
